Gary Rhodes spends Valentine's Day at TVU


And spills the beans on "Hell's Kitchen"

Thames Valley University's lecture theatre/demonstration kitchen was packed to capacity (and more) for television chef Gary Rhodes' visit on Tuesday February 14. The chef, restaurateur, celebrity and author was there to give a cooking demonstration to aspiring chefs.

Gary has strong ties with the University and is a patron of the School of Tourism and Hospitality and Leisure (THL). He is well known as an ambassador of British Foods and prepare a selection of dishes utilising the best of local produce. His choice for a special Valentine's Day meal was roast duck with crispy duck hash, local beer gravy, spring greens and glazed carrots. His demonstration was an opportunity for students to see how a top class meal is prepared from start to finish by one of Britain's most popular chefs.

Elaine O'Sullivan, Operations Manager for TVU's School of THL , said:

�We are very grateful to Gary for fitting this demonstration into his busy schedule. He is a fantastic chef with a genuine passion for cooking delicious, simple food, and we hope that he can pass on some of this passion to our students.�

Working in the gleaming stainless steel kitchen, Gary stressed the importance of choosing fresh and good quality ingredients. He said:

"I've been cooking for 30 years and I can never get bored. I like to take old ideas and give them new life. Cooking is all about blending flavours and getting the right texture." He recommended concentrating on a few flavours and bringing them out. While he loves British cooking and ingredients, he believes that we can learn from French cuisine by valuing simplicity and not adding too many components to a dish.

Top tips from his demonstration:

- You can fry duck on a low heat and a dry pan for 10 minutes each side to melt out the large amounts of fat, and then it only needs roasting for a few minutes in a hot oven

- Don't go for Guiness for the beer gravy, but choose a milder brew e.g. Shepherd Neame's Spitfire.

- Tuck a tea towel into your apron for wiping your hands on, if you really want to look the part!

And finally, how was "Hell's Kitchen"? "A nightmare!", he laughed.
