Reference book of culinary terms.

Looking for a good reference book and dictionary of culinary and cooking terms. Its for a young friend of ours who starts a three year chef's course in October. Also, I would like to know things like the difference between eggs Benedick, eggs Florentine and eggs Arnold Bennett. Thanks.

Eggs benedic - with hollandaise sauce, Eggs Florentine as Benedic but with spinach, not sure about Arnold Bennett - perhaps a novel?

Jerry - My 1961 edition of LG dedicates pages 372-398 to egg dishes, so (hoping the modern edition covers things similarly) you should be able to get your egg dish questions answered. Enjoy.

Larousse aught to be better than it is....for the price.You just need to look at the Index of The Theory of Cateringto see that it is for serious would-be caterers.I have both if you wish to compare.

Thanks Tracey - your advice noted. I recall making a commercial catering film years ago, when I used M.Victor Cesarani as an advisor - there were only a few colleges offering catering education, just Bournmouth, Blackpool and London Poly I think - he was then Head of Hotel Hospitality and Catering at Ealing Tech College - a helpful and knowledgeable catering professional. Thanks again.

Hi Gerry I think you would enjoy the theory' not as hard a slog as the larousse, as I said previously its probably on your young friends book list for his course, and of course Victor Ceserani  was head of catering at ealing for many years :)

Following the excellent recommendations for Larousse Gastronomique, I called in personally went to Waterstone's in EBSC to ask/order the book. The kind assistant looked up the details on their computer and quoted a price of some £80plus for the latest hardback edition...but her computer kept saying "Do not order" for some strange reason. She told me to search Waterstone's website on my home computer. Came across a latest edition hartdback at only £28.80p from Amazon, ordered it and it was delivered this morning! Waterstone's loss I'm afraid!Excellent reference book - thanks all.

The Larousse is a fantastic book, but I don't recall the last time I opened mine, however my mother reads hers like a novel
