The local authority inspect against a fairly rigid framework based on a number of key areas defined by the Food Standards Agency national Food Hygiene Rating Scheme (FHRS). These cover, inter alia, how the food is handled – how it is prepared, cooked, re-heated, cooled and storedThe condition of the structure of the buildings – the cleanliness, layout, lighting, ventilation and other facilities and how the business manages and records what it does to make sure food is safe. The Sami Spice and Brentford tandoori inspections were less than a month apart. The Sami Spice was listed with 'Major Improvements Necessary' the second lowest rating, the Brentford Tandoori was given a 'Very Good' the highest rating. The scheme, of course, doesn't relate to the quality of the food just how hygeinically it is stored, preapred, served and managed.
