One star is what you automatically get is you don't have a logbook on the premises when the inspector visits regardless of whether you have two, three, four or five stars of hygiene. When you have a log book and isn't fully up to date if you have five stars of hygiene you automatically get three stars. Having a log book that is up-to-date on re-inspection (which may be requested by the restaurant) means that you get moved to your appropirate rating above the one or three stars. It really requires somewhere to be bad for it to be closed down. If you have been naughty a few times, or the publicity function of Ealing Council feels that the situation merits it then you may get a press release. If you are place of good repute with one bad slip then the Council may decide not to publicise it but instead let you get your house in order if you close and actually do the work within its specified closure period.
